Waterford Organic Gaia 1.1 Age_55 Distilled 14th June 2005 andThis latest release from Waterford distillery is the first organic Irish whisky to be certified by the Organic Trust. Gaia 1. 1 has been created from Organic Irish barley grown at seven different farms then matured in a combination of casks (42% first fill US oak, 17% virgin US oak, 18% Vin Doux Naturel sweet fortified wines and 23% premium French oak) then bottled at 50% vol.
